At Matcha Memoir, our commitment to delivering exceptional matcha begins with our partnership with a distinguished tea farm nestled in the heart of Wazuka Town, Kyoto Prefecture, a region renowned for its unparalleled tea cultivation heritage.

The Legacy

For over 800 years, Wazuka Town has been the cornerstone of Uji tea production, preserving traditions that date back to the Kamakura period. The pristine environment, characterized by clear air, significant temperature variations between day and night, and mist rising from mountain rivers, creates the ideal conditions for cultivating premium tea leaves.

Our partner farm exemplifies a dedication to purity and quality through their “Tea by Tea” series, which emphasises:

1 - Single-Origin Purity

Each matcha offering is crafted exclusively from Uji tea leaves harvested in Wazuka Town, ensuring an authentic and unadulterated flavor profile.

2 - Single Cultivar Excellence

By focusing on single cultivars, the farm delivers matcha that highlights the distinct characteristics of each tea variety.

3 - Additive-Free Assurance

The tea leaves are processed without any additives, preserving their natural essence and ensuring a pure matcha experience.

4 - Pesticide Reduction

Aligning with international health standards, the farm employs reduced pesticide practices, adhering to guidelines to ensure consumer safety.

5 - Rigorous Quality Control:

A thorough quality management system is in place within their processing facilities, guaranteeing that each batch of matcha meets the highest standards of excellence.

6 - ASIA GAP Certification:

The farm’s adherence to Good Agricultural Practices is validated by their ASIA GAP certification, reflecting their commitment to sustainable and responsible farming.

7- Transparent Processes:

From cultivation to processing, the farm maintains transparency in their methods, fostering trust and confidence in the quality of their matcha.

From Harvest to Cup: The farm’s meticulous processing methods ensure that the integrity and flavour of the tea leaves are preserved:

  • Immediate Processing

Freshly picked tea leaves are processed on the same day to maintain their freshness and prevent oxidation.

  • Advanced Drying Techniques

Utilising a 10-meter-long dryer, tea leaves undergo rapid drying followed by a slower drying process, resulting in a well-balanced aroma and flavour.

  • Precision Sorting

Stems and veins are carefully removed through repeated processes, ensuring that only the finest parts of the leaves are used in the final product.

A Shared Vision

Our collaboration with our tea farm reflects a mutual dedication to excellence, sustainability, and the rich traditions of Japanese tea culture. Together, we bring you matcha that is not only of the highest quality but also a testament to centuries-old practices and a commitment to purity.
